Masala Rice by Raji

Simple yet delicious, this recipe can make simple dinner feel festive. Enjoy this as one pot meal or as an accompaniment to tasty North Indian gravy

Ingredients:

Basmati Rice/ Jeera Samba rice – 1.5 cup

Tomato 4

Big Onion 2

Coriander leaves – for garnishing

Bay leaf – 1

Oil/ Ghee – as required

Grind Together: 

  • Red chilly 4
  • Sombu 1/2 tsp
  • Coconut 1/4 (1/2 of half shell or 1/2 cup grated)
  • Garlic 5 pods
  • Small onion 5
  • Mint leaves (புதினா) – Handfull
  • Coriander leaves – Handfull

Method:

  1. Soak the rice in water for 20 minutes
  2. Grind all the ingredients for masala 
  3. Cut onion lengthwise and chop the tomatoes
  4. In the pressure cooker pan, heat oil/ ghee
  5. Add the bay leaf
  6. Add the onions and fry till golden
  7. Add the tomatoes
  8. Add the ground masala
  9. Fry till raw smell leaves and oil separates 
  10. Add 2.25 cups of water and salt
  11. When water starts boiling, add the soaked rice
  12. Once the mix comes to a boil, put the lid of the pressure cooker on
  13. Cook on low flame for 15 minutes
  14. Remove from heat 
  15. Garnish with coriander leaves and serve with raita
