Sura Puttu (சுறா புட்டு – Shark scramble)

Method 1 – by Santana


1/2 kg Shark

A pinch each of Cinnamon, cloves, fennel (பட்டை, கிராம்பு மற்றும் சோம்பு) – dry grind

4 Big onions finely chopped 

2 tbsp Ginger, Garlic – finely chopped or ground

1 cup grated coconut

5-6 chopped green chillies

1/2 tsp turmeric

Salt, as needed

1/2 a lemon

1/2 cup chopped coriander leaves

1/2 handful curry leaves

Steps to make this recipe

  1. Boil shark with half the turmeric and salt
  2. Squeeze out water and mash it well
  3. In a heavy pan heat about a table spoon of oil
  4. Add the dry ground masala, curry leaves, chopped onions, chillies, ginger, garlic, grated coconut, chopped coriander leaves and the mashed fish
  5. Add remaining salt and turmeric
  6. Keep stirring until it all cooks together (approx 15-20 min)
  7. Remove from heat and squeeze the lemon

Method 2 – by Lakshmi

  1. Steam cook Sura fish (shark) 
  2. Peel the skin
  3. Remove the centre bone
  4. Mash up the fish with a fork or hands
  5. Finely chop 1/4 kg big onions and 8-10 green chillies
  6. Heat oil in a kadai
  7. Season with mustard and jeera and உளுந்து
  8. Sautee the onions and chillies
  9. Add turmeric,salt and fish
  10. Add 1/2 a grated coconut
  11. Extract juice from 50g of ginger and add the ginger extract to this
  12. Cook it all together for about 15-20 min
